You know how a lot of people say things like “I remember my mom used to make the best chocolate chip cookies” or ” birthday cake” or “cup cakes”, well when I look back on things I’ll say “My mom made the best hummus”. This is the recipe she uses to make “the best” hummus.
1 tbsp olive oil
2 cloves of garlic
1 tin of chickpeas
4 tbsp lemon juice
3 tbsp tahini
2 tbsp water
1/2 tbsp salt
Simmer minced garlic in oil until fragrant (fragrant is such a fancy word). While this is going on drain and rinse the chickpeas in strainer. When the garlic is done add it to the chickpeas along with the rest of the ingredients. Then mix until smooth with a handheld mixer. Fini! I enjoy stuffing pitas with this and dipping vegetables in it. Enjoy!
So I got a juicer which is super cool! I’ve always wanted one. The first juice I made was random. I threw in the fruit I had around my house but it turned out really well. I used 2 apples, 2 clementines, and a big handful of raspberries. It’s a sweet juice with the primary flavorful being apple. I ate it with breakfast the next morning so it kept well overnight in a mason jar I just had to shake it a bit. I’m super excited to try out some more juicing recipes. I’m dubious of using vegetables though, I mean come on in what world is green juice appetizing!
It’s hard waking up early in the morning, especially in the winter because for me it’s still dark out. Here are a few things that I find make early mornings a bit nicer.
– Plan out your outfit the night before cause I don’t trust my fashion decisions at 7AM.
-Have everything ready to go the night before like a lunch, wallet, or anything you’ll need for the day.
-Take a travel mug, it always makes me feel cool (I’m probably not though). I love taking peppermint or chai tea.
-Have a calming alarm clock song. I used to have Katy Perry’s “Waking Up in Vagas” (I thought it was clever) as my alarm but it always scared me, stressed me out, and made me to this day dislike that song. Try some soft pop music like Ariana Grande or country.
-Have a go to breakfast for when you’ve opened up every cupboard 3 times and don’t know what to eat. Mine is a smoothie with 1 cup of chocolate almond milk, 1 frozen banana, and 1/4 a cup of oats.

I like to say that I can bake but in no way can I cook. My cooking skills go as far a making pasta (once I managed lighting some on fire). Occasionally I’ll find a recipe I think sounds cool (or looks pretty) on Pinterest and give it a try. This weekend I made Southwestern Stuffed Spaghetti Squash and it actually turned out really well. I used this recipe HERE from The Comfort of Cooking. I totally recommend trying it out. I recommend cooking the squash for a bit longer than it says to, other than that it turned out really well!
